ATLAS, Singapore: the home programme: eight years of menus, training, and gin curation

ATLAS Singapore is the home programme. Yana joined the bar as a barista in 2017, took the head bartender chair in 2022, and runs the beverage operation today as Beverage Director and Gin Researcher. Under her tenure ATLAS has placed on World's 50 Best Bars three years running (most recently #43 in 2024), the 1,300+ bottle gin tower has grown into a working library, and the bar has authored the menus that defined a decade of Singapore's cocktail scene.

The full operating playbook of a top-50 bar: menu architecture across the classic cocktail families, recipe and build sheets refractometer-checked for ABV transparency, batching and prep systems sized to a high volume bar, and the training curriculum that takes a new bartender from tasted-through to certified-solo in their first six weeks.

  • Inside ATLAS Singapore: the floor-to-ceiling gin tower behind the main bar.
  • ATLAS gin tower: over 1,300 bottles racked from floor to ceiling.
  • ATLAS martini service: etched coupe, citrus twist, lit from above.
  • Vanda Mist cocktail, an orchid-garnished signature serve.
  • The Simple Pleasures menu in print: a flat-lay of the bound edition.
  • Simple Pleasures: Old Fashioned, single rock, neat garnish.
  • Simple Pleasures: Ramos Gin Fizz with the signature tall pour.
  • Simple Pleasures: honey-forward serve in a stemmed glass.
  • Simple Pleasures: pink aperitif, served straight up.

W Bali, Seminyak, Bali: the beach-club brief: daytime energy meets sunset refinement

Twin Spirits partnered with W Bali Seminyak to craft the beverage identity of the property's new beach-club concept. The drinks programme reflects the rhythm of the space, lively beachside cocktails for daytime energy and more refined serves as the atmosphere shifts toward sunset.

Alongside the cocktail menu, a curated selection of no-alcohol beverages designed for guests activating the wellness portion of the beach club, with fresh, lighter profiles suited to Bali's climate and the club's wellness-led environment. Beyond the menu itself, Twin Spirits worked directly with the bar team to prepare the programme for daily service: clear preparation guides and hands-on training so the team understands both the techniques and the intention behind every drink. The result is a beverage experience shaped not only by the menu, but by the people delivering it.

  • W Bali pool deck at golden hour, coconut palms framing the ocean horizon.
  • Sunset on the Seminyak beach: the beach club's after-hours service window.
  • Daytime pool service: the half of the programme that runs in 30°C.
  • Last light over the water, the cue the menu shifts on every evening.
  • A signature serve in golden hour: citrus-forward, low ABV, built for the heat.

Hilton Luxury Portfolio, Americas: eleven luxury properties, one bar standard

Hilton Americas retained Twin Spirits to assess, develop, and elevate the cocktail and bar programming across eleven luxury properties: eight Waldorf Astoria locations and three Conrad properties spanning the United States. The brief was to refine each property's bar experience to the luxury expectation of the Hilton guest, programme by programme.

Initial site assessments at each property, strategic operational planning, and bespoke proprietary cocktail programmes built for each property and its various venues. In-depth training in best-in-class cocktail and bar practice alongside luxury hospitality service workshops for every team. Twin Spirits also filmed and edited a library of mise-en-place videos so each property can re-onboard new bartenders to the programme on its own schedule, without flying in a trainer for every cycle.

  • Hilton Luxury Portfolio signature cocktail, plated in the bespoke house programme.
  • Hilton signature serve, proprietary programme across Waldorf Astoria and Conrad.
  • Hilton bespoke cocktail, one of the eleven property-specific programmes.
  • Hilton Luxury Portfolio cocktail, photographed for the in-bar menu.
  • Hilton signature drink with recipe and build sheet standardised across properties.
  • Hilton bespoke cocktail, presented in the luxury hospitality service style.
